Green Bean Salad


Whenever my nephew Thomas eats something tasty he enthusiastically says "Deeeeeelicious".. It is quite possibly the cutest thing ever... I swear my family literally breeds food lovers.

When I had my first bite of this fresh, crisp, bright salad I heard his voice saying "Deeeeelicious" in my head. I was happy that this made me think of him and I ate with delight and a wave of nostalgia- recounting memories of home.

I love this salad. It's so flavourful and healthy. There's never a dull moment as you have crunchy and soft textures as well as bold flavours from the onions, capers, mustard and vinegar. You must try it!


Ingredients:
2 cups green beans blanched and cut in half
1 red bell pepper roasted, peeled and julienned
1 large potato, boiled and sliced
1 tablespoon capers
1 teaspoon whole grain mustard
1 teaspoon dijon mustard
1/2 a small red onion sliced
1/2 tablespoon white wine vinegar
1/2 tablespoon canola oil
1/2 tablespoon extra virgin olive oil
1 teaspoon salt
1/4 teaspoon pepper
a handful of chopped parsley

Method:
In a bowl cover onions with cold water and a dash of salt. Let this sit for at least 10 minutes. I do this to remove the strong onion aftertaste. In a separate bowl mix mustard's and vinegar together. Slowly add oils to emulsify. Add a good pinch of salt. Drain the onions and rinse once more to get rid of the salt. Add the green beans, bell pepper, capers, potato, onions, parsley and toss in the dressing until everything is coated. It's best to do this while the potatoes are hot as it helps infuse and heighten all the flavours.
