Sweet Pea Salad


I really enjoy and appreciate a good salad but it seems that most restaurants have such predictable salad items. There's the caprese, the arugula and parm, nicoise, blue cheese and pear etc. So when I went to abc kitchen I was really surprised and delighted with their sweet pea and parmesan salad.

It was so refreshing and crisp. The flavours were bright, the dressing was on the richer side but the outcome was so unique and harmonious. I had to recreate this at home and I pretty much nailed it:)

This is such a great salad to serve in the summer because it's filling yet very light!

Ingredients:
2 leaves of radicchio
1/4 pound sweet peas
1/4 cup grated parm cheese
1.5 tablespoons lemon juice
salt and pepper to taste
3 tablespoons extra virgin olive oil

Method:
Bring a large pot of salted water to a rolling boil. Put in the sweet peas for one minute. Remove and drain.

Julienne all the sweet peas. Shell a couple of the sweet peas and reserve the individual peas for garnishing, then carry on julienning it.

in a separate bowl whisk the parm cheese, lemon juice, olive oil salt and pepper together. Add to the peas and toss until everything is incorporated. Place a leaf of radicchio on the place and top with the pea salad. Sprinkle the reserved peas and serve:)
